Add the onions, green bell pepper, sweet potatoes, and salt and pepper to taste. Sauté 5-7 minutes until soft.
Add the ground beef and cook, stirring occasionally for 5-8 minutes until browned. Remove the pan from the heat.
Spread all ingredients to evenly coat the pan.
Whisk the eggs together with a splash of milk, salt, pepper, garlic powder, ground mustard, and half of the shredded cheese.
Add the egg mixture into the pan and distribute evenly. Top with the remaining cheese and bake for 15-20 minutes until eggs are cooked through and set. Enjoy!
