Heart Haven: Farmer's Breakfast Frittata

Farmer’s Breakfast Frittata  


  • 1 Tbsp olive oil
  • ½ white onion, diced 
  • 1 green bell pepper, diced 
  • 1 cup diced sweet potatoes, steamed 
  • 8oz lean ground beef 
  • 12 farm fresh eggs 
  • Splash of milk
  • 1 tsp salt
  • ½ tsp pepper 
  • ½ tsp garlic powder  
  • ¼ tsp ground mustard 
  • 1 cup shredded white cheddar cheese, divided   


  • Preheat oven to 400F.
  • Heat a large cast iron skillet oven medium heat. 
  • Add olive oil to coat the pan.
  •  Add the onions, green bell pepper, sweet potatoes, and salt and pepper to taste. Sauté 5-7 minutes until soft. 
  • Add the ground beef and cook, stirring occasionally for 5-8 minutes until browned. Remove the pan from the heat. 
  • Spread all ingredients to evenly coat the pan. 
  • Whisk the eggs together with a splash of milk, salt, pepper, garlic powder, ground mustard, and half of the shredded cheese. 
  • Add the egg mixture into the pan and distribute evenly. Top with the remaining cheese and bake for 15-20 minutes until eggs are cooked through and set. Enjoy!
