Heart Haven: Beef up your snacks

Raspberry Smoothie/Raspberry Popsicles 

Ingredients:

  • 1 Cup whole milk yogurt 
  • 1 Cup frozen raspberries 
  • 1-2 Tbsp local honey
  • Handful of spinach 
  • 1 Tbsp MCT Oil 
  • 1-2 Scoops unflavored beef (bovine) collagen 
  • Handful of ice
  • Water or milk 

Instructions: 

  • Pour all ingredients into a blender and blend until smooth and creamy. 
  • For popsicles, pour mixture into popsicle molds and freeze. Store in freezer.

Beef Jerky Trail Mix 

Ingredients: 

  • 4 Tbsp butter
  • 2 Tbsp Worcestershire sauce 
  •  1 1/2 tsp salt
  • 3/4 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 Cup pretzels or cheese crackers
  • 4 Cups air popped popcorn
  • 1 Cup almonds 
  • 1 Cup pumpkin seeds 
  • 1 Cup walnuts 
  • 1 Cup cashews
  • 1 Cup dried unsweetened cherries 
  • 1/2 Cup dried cranberries 
  • 1 Cup beef jerky chopped 

Instructions: 

  • Preheat oven to 350F
  • In a medium saucepan, heat butter and Worcestershire sauce over low heat. Stir in the salt, garlic powder, and onion powder.
  • Pour all dry ingredients into a large mixing bowl. Pour butter mixture over top and toss until everything is evenly coated.
  • Bake at 350F for 16-20 minutes.
  • Transfer dry mixture back into the large mixing bowl. Add dried cherries, cranberries, and beef jerky. Toss together and enjoy! 
  • Store in individual sandwich bags or an airtight container.
